For Malvasia di Castelnuovo Don Bosco DOC (the style used by Bava Vini ), the grape composition is very specific: Minimum 85% Malvasia di Schierano Up to 15% (optional blending) of Freisa and/or other permitted local red varieties in the DOC area In practice, many producers—including Bava for their “Rosetta” style—often use almost 100% Malvasia di Schierano, especially for the aromatic sparkling versions, to preserve the floral, sweet, and fruity character.
